Carpathian is a hardneck rocambole variety with 7 -9 cloves per head. It is a variety that originates from the Carpathian mountains in Poland. It has white wrappers with some brown and purple stripes and the cloves are rosy brown with subtle purple striping. Typical of rocambole varieties, it has a strong, complex garlic flavor with a bit of sweetness and a deep heat when it is raw and maintains it’s strong garlic flavor when cooked. It truly maintains it’s “true garlic flavor” in all sorts of cooking applications. Carpathian is a reliable grower and is very cold tolerant. it also has an excellent shelf life.
